– 2 boneless, skinless chicken breasts 

– 6 cups chicken broth 

– 4 cloves garlic, minced 

– 1 tablespoon grated ginger 

– 2 tablespoons soy sauce 

– 1 tablespoon sesame oil 

– 1 tablespoon rice vinegar 

– 2 packs of ramen noodles (discard seasoning packets) 

– 2 large eggs 

– 2 green onions, thinly sliced 

– 2 cups sliced mushrooms 

– 2 cups baby spinach 

– Salt and pepper to taste 

– Optional toppings: sliced carrots, corn kernels, nori sheets, chilli oil 


1. Cook Chicken: 

  • Season chicken breasts with salt and pepper. In a large pot, bring 6 cups of chicken broth to a boil. Add chicken breasts and reduce heat to simmer. Cook for 15-20 minutes or until chicken is cooked through. Remove chicken from the pot, shred it with forks, and set aside. 


2. Prepare Broth Base: 

  • In the same pot, add minced garlic, grated ginger, soy sauce, sesame oil, and rice vinegar to the chicken broth. Bring to a simmer and let it cook for 5 minutes to infuse the flavours. 


3. Cook Ramen Noodles: 

  • While the broth is simmering, bring a separate pot of water to a boil. Cook the ramen noodles according to the package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside. 


4. Blend Soup Base: 

  • Transfer the chicken broth mixture to a Vitamix Commercial blender, Vita-Prep 3. Blend on high speed until smooth and creamy. 


5. Prepare Soft-Boiled Eggs: 

  • Bring a pot of water to a boil. Gently lower the eggs into the boiling water and cook for 6-7 minutes for soft-boiled eggs. Transfer the eggs to a bowl of ice water to stop the cooking process. Once cooled, peel the eggs and slice them in half lengthwise. 


6. Assemble Ramen Bowls: 

  • Divide the cooked ramen noodles among serving bowls. Ladle the blended soup base over the noodles. 
  • Add shredded chicken, sliced mushrooms, baby spinach, and any other desired toppings such as sliced green onions, carrots, corn kernels, or nori sheets. 


7. Serve: 

  • Place a soft-boiled egg half on top of each ramen bowl. Drizzle with chilli oil if desired. 
  • Serve hot and enjoy your homemade chicken ramen! 


  • Customize your ramen with your favourite toppings such as bean sprouts, or thinly sliced radishes. 
  • For extra flavour, you can add chilli bean sauce, vinegar, or fish sauce to the broth base. 
  • Adjust the seasoning of the broth according to your taste preferences by adding more soy sauce, sesame oil, or salt and pepper. 
  • Feel free to use a combination of chicken thighs and breasts for added flavour and texture in the soup.
